Dimple Maggot cooks : Summer Pea Watercress Soup


An extremely healthy soup. I felt like a part of me would turn green after I drank this. LOL While the fiance wasn't a fan of green, I gobbled down this in a matter of minutes!

Ingredients (2 pax servings) :

• 1 ltr of chicken stock
• 1 bunch of watercress, washed and chopped
• 125gm canned summer green pea

Method :

Heat a medium sized pot and pour 1 ltr of chicken stock. Throw in watercress and pea. Turn the heat down and cook very gently with the lid on for 10 minutes.

Remove the pot from the heat. Whizz the boiled watercress and pea with a hand blender, or in a liquidizer, until smooth. You will occasionally need to add a bowl of soup to have a smoother blend.

Separate into two bowls, mix in the soup and stir until thick. Serve with a sprinkle of black pepper.
