Dimple Maggot cooks : The Lambergini Enoki

Initially I was all ready to make the classic cheeseburger. Only that, I couldn't find minced beef =.= so I had to opt for minced lamb to make lamb burger which I am glad I did as I am a lamb lover. So to have conquered the lamb burger, it felt like I've ticked off something from my home made list, which I don't have.

The lamb burger turned out really well. Everything that I made as toppings went great together, especially the enoki as that was sort of last minute because I realized I had enough left in the fridge so I quickly made that up as a topping. Honestly without the enoki, it wouldn't be the same.

Ingredients (2 pax serving) :

• 2 packet of minced lamb meat
• sea salt and freshly ground black pepper
• 1 tablespoon of thyme, rosemary, steak seasoning
• 2 thin slices of good melting cheese, such as Cheddar
• 6 rashers smoked streaky bacon
• 2 sesame seed burger buns, halved
• 1 cap of red wine
• 1 tablespoon of Worcestershire
• 1 handful of enoki
• 2 eggs
• 1 tablespoon of Bovril
• 4 slices of tomato
• 1 clove of garlic, chopped

Method :

In a big bowl, mix minced meat, thyme, rosemary and steak seasoning. For best result, use hand to gently mix everything together. Try to do it bit by bit as the more you handle the meat, the softer it gets and easier to break apart during cooking, so handle it as little as possible while mixing everything together.

Divide mince lamb into 2 portions, then pat and shape each portion into a burger patty, about 2cm thick. It is advisable to leave the patties for an hour for firmer patties.

Put a pan on a high heat. Once hot, add bacon, cook until nice and brown. Pour excess oil aside. Set bacon aside.

When ready to cook the patties, put a pan on high heat, pour a little of bacon oil. Spread oil evenly on pan. Gently place patties onto pan. Turn the heat down to medium and cook for 10 minutes (each side), or until nicely charred. Sprinkle them with a pinch of salt and pepper, then turn them over and season with wine and Worcestershire sauce. Towards the last 2 minutes, lay slices of cheese on each burger so it starts to melt. These timings will give you blushing burgers, but cook yours for a little longer if you prefer. Once ready, set aside.

Have a clean medium pan on high heat. Pour the remaining bacon oil onto the pan. Once nice and hot, break an egg and cook for about 2-3 minutes for half cooked egg yolk result. If preferred harder egg yolk result, you may cook through for as long as you like. Repeat for second egg.

With the same pan, throw in garlic. Fry till golden brown and add enoki. Season with salt and pepper. Once cooked, add Bovril. Stir fry for 1-2 minutes. Set aside.

Layer up the burgers in the toasted buns with tomatoes, bacon and enoki. Serve with home-made summer pea and watercress soup, if you like.

Dimple Maggot cooks : Garlic Rosemary Cheesy Mash

Garlic-Mash

Ingredients (2 pax serving) :

• salt and freshly ground black pepper
• 1 lugs of vegetable oil
• 1 cloves of garlic, finely chopped
• 2 tablespoons of rosemary
• 3 1/2 medium sized potatoes
• 100ml milk
• 2 knobs of butter
• half bowl of grated mozzarella

Method :

Peel the potatoes, boil them in salted water until cooked through, chop them into medium cubes to quicken the process of cooking. Then drain well. Heat the milk gently then pour over the potatoes. Add a knob of butter and mash well until smooth and creamy.

Melt the remaining butter in a frying pan. When it starts to bubble, throw in the rosemary, garlic and fry until crisp. Drain, and add the rosemary, garlic and mozzarella to the mashed potatoes with salt and freshly ground black pepper.

I adopted something green...

...and his name is Stewie!

Isn't he adorable?

I had a hard time picking him out of the bunch at IKEA last Saturday. But when I saw him, looking all green under the light, I snatched him up and went on looking for a little potty for him to sit in.

I've never really had a plant in my life because they end up dying, I would assume. So, Stewie is my proud little green baby and I would like to help him survive for as long as he can last!

I shower him at least once every 2 to 3 days. He is now sitting quietly on my kitchen counter, looking at me as I am blogging. It's amazing how I feel so much better, knowing that I own something green. Feels, healthier for some reason.

So far he has been good. He never makes noise. He watches me as I cook and clean. Maintenance free unlike some other pets. Okay, he isn't much of a pet lah. He just provides more oxygen.

Did you know that having a plant in your house makes a whole lot of difference? The air is fresher, green is something good for the eyes to look at (scientifically proven) and it definitely looks good as a decorative element to the house.

The Malaysia's Hottest Bloggers were invited to dine with X Top Model Search 2011 Finalists at Garibaldi and what an experience it was. I got to meet all of the beautiful ladies who are competing in The X Top Model Search 2011 that night and managed to score an interview with one of them as well. All to come right after we go through with the food we had at Garibaldi.

The green pepper wasn't really my thing but I loved the eggplant and mushrooms! Mushrooms mostly because it was pretty flavorful.

Ah, this dish was really light. However, the mushroom sauce was amazing! I couldn't help eating most of it..hehehehe..

It is amazing how light this was, yet it was filled with flavor from the clams. The white wine definitely brought out most of the taste!

After dinner, I met with Ieqa, one of the contestants of the X Top Model Search 2011 and had a chat with her. She is super friendly and down to earth despite being in a tight competition as you can see that there are a few left and according to Ieqa, they've already went through some challenges together.

In the midst of going through her law courses in Kuala Lumpur, Ieqa is trying to fulfill her dream in becoming a model. Asked of her favorite supermodel, she said, "Chanel Iman from USA". Apart from being a part time model, as she previously started modelling 6 months ago, she loves to hang out with her bunch of friends, being adventurous, and basically experiencing everything life has to offer.

One thing that amazed me was when I asked her, "What makes you different from most of the people you know?" and her answer was "I love memorizing things". I've not really come across someone who loves memorizing things, really but I was intrigued by her. This definitely will come in handy in some part of this competition.
